Key features for foods

Key features for foods and beverages (in comparison to standard brownie). ProTake can also help to optimize the taste profile of a savory snack, while helping to adjust the mouthfeel in low-fat dairy products. Reformulating bars For protein, snack, sports nutrition, and meal replacer bars, there are several issues manufacturers need to overcome. For example, different proteins can lead to stabilization-linked issues like hardening, cold flow, or even undesirable flavors. This can make it tough to create high-protein bars with the right taste and texture in the long run. With a highly soluble, neutral, and easily dispersible ingredient like ProTake, making high-protein bars becomes much easier. Creating the desired final texture is simpler too, as it helps to add a smooth mouthfeel and additional chewiness. With the right dosages and processing conditions already applied, potential defects can be managed throughout production. This helps manufacturers to create stable bars with the right texture, taste, and nutritional breakdown for their consumers. A recipe example For an example of how ProTake can be used in innovative food solutions, here’s a recipe idea: a reformulated high-protein bar. Diabetes Photo © : Ingredia More promising steps in the prevention of Type 2 diabetes Diabetes, a worldwide chronic disease on the rise In 2019, a disturbing 1 out of 11 adults, equivalent of 460 million people, had diabetes in the world 1 , with half of them being undiagnosed. Growing fast, diabetes should affect 700 million people by 2045. The rising number of diabetics is strongly associated with economic development and modern way of life: two-thirds of people with diabetes live in urban areas. Physical inactivity, dietary changes with overweight and obesity raise, ageing population are the major causes of diabetes known by now, but family history or ethnic origin can also be risk factors. In the long run, diabetes leads to adverse effects on health. It can affect eyes, kidneys, feet, cause heart conditions or strokes. Is prevention possible? Silver lining to these clouds is that type 2 diabetes is largely preventable! 1 out of 13 adults in the world is at pre-diabetic stage 1 , meaning at a high risk to develop type 2 diabetes. This represented in 2019 375 million people 1 . Prediabetes is defined by an irregular, higher-than-normal blood sugar level, sign of a growing body dysfunction. It can be detected by the fasting blood sugar level, between 1 g/l and < 1.25 g/l or/and glycated hemoglobin level between 5.7 and 6.4 %. Prediabetic stage is at the crossroads of healthy and diabetic: if nothing is done, 80 % of prediabetics will become lifelong diabetics within 5 to 10 years. But this is also when good lifestyle habits can bring you back to healthy body weight and glycaemia: change in eating habits and exercise, combined with dietary supplementation, can help. Pep2Dia ® , born from research Milk products consumption have long been known to reduce the risk of type 2 diabetes. French researchers from La Rochelle university and Ingredia went a step further and isolated bioactive dipeptide AP (Alanine- Proline), with an inhibitor effect on the enzyme α-glucosidase, an enzyme in charge of breaking polysaccharides into monosaccharides. The hydrolysate was patented in 2015, and Pep2Dia was born. Through pre-clinical and clinical studies, Pep2Dia ® demonstrated its efficacy in reducing postprandial glycaemia with a significant effect vs. placebo. In particular, it showed an ability to decrease the glycated haemoglobin levels (HbA1c) after 6 weeks of supplementation at a 1400 mg dose 2 . New promising steps in 2021 2021 saw two new promising steps for Pep2Dia ® : First, new study data show that the dose can be reduced to 700 mg before meals, for greater convenience of administration. Second, a New Dietary Ingredients (NDI) status from US FDA granted in Sept 2021, validating its safety for all types of food supplements on the US territory, a country bearing 88 million prediabetic people according to latest CDC statistics.
