Rohstoffe · Inhaltsstoffe 1 dsm221239_Brewing_adv_188x136.indd 1 04-07-2022 14:45 Better taste, efficiency and sustainability in brewing: enjoy it all One thing is becoming increasingly clear in the brewing industry. People want to enjoy great-tasting beers and other beverages, while also being more conscious about their own health – and that of the planet. For example, in a recent survey, 75 % of Americans said they would happily pay more for beer made using environmentally sustainable practices; while according to further research, 39 % of beer drinkers from multiple countries said they prefer locally sourced beverages. Pleasing consumers – it’s not an easy job. Especially when considering your need for more efficient brewing processes in a resource-intensive industry that requires large amounts of energy, water and raw materials. That’s why at DSM Food & Beverage, we strive to achieve a world where you don’t have to choose between taste, texture and health – of people or planet. In brewing, our unrivaled scientific foundation – along with our expertise and dedication – helps you create delicious and sustainable beers so that you and your consumers can enjoy it all. For example, our brewmasters have global experience and regional insights to help you adjust your processes to locally sourced ingredients; while our technical and application teams can support you in setting and reaching your sustainability targets. In fact, when you work with us, you gain our knowledge and expertise of brewing from across the extensive DSM portfolio. Here, our innovative enzymes can reduce fermentation and production time, or eliminate steps – for example in the beer stabilization and clarification process - thus helping you reduce energy, water and waste streams. Just one example is adjunct brewing, which involves switching from malted to un-malted brewing grains, allowing you to use 100 % local barley instead of expensive imported malted barley. Not only can brewing with 100% un-malted barley result in carbon footprint savings of more than 60 kilograms of CO 2 per ton of barley, it can also help increase brewing capacity by up to 25 %. Nowadays, adjunct brewing using enzymes can be done without compromising the taste or texture of the beer. After performing their function, our enzymes are no longer active in the finished beverage – which is vital for the 22 % of consumers who value flavor above all else. Ultimately, by understanding your business as well as changing consumer preferences, we can help you create a differentiated product with great taste – so that you can enjoy it all. www.dsm.com Beverage & Brewing · Suppliers‘ Guide 2022/23 13
